October Lab Reflection – Calzones

The lab I wanted to reflect on for October was the calzone lab. I chose to reflect on this lab because it was probably one of my least favourite lab this month. The calzones themselves were good and I had never tried them before, so it was cool to try something new. They were also pretty big, especially since we only had three people in the group that day. The inside of them was spinach and three different types of cheese but they didn’t have a lot of flavour because our group didn’t have sausage in ours. They weren’t my favourite thing we have made so far but I still liked them and the tomato sauce we added afterwards made them taste a lot better – kind of like a pizza. Even though the taste was good, the reason why this lab didn’t go as well was because of how the grouped worked together. This was the first time in a different group and we didn’t know each other very well and weren’t used to each other so everyone was slower and didn’t know what to do. After we had all been in our separate groups for a while we had gotten used to everyone having their own duties, so it was kind of like starting from the beginning again. We were also in a new unit which has different places for all the equipment and the oven was slower than the others. This made our calzones take the longest in the oven out of all the groups and the finished product still wasn’t cooked exactly right when we took it out after an added 10-15 minutes. The calzone dough was thick, and it made the outside of the calzones hard but inside of the dough still soft and uncooked. If I were to make the calzones again I would roll out the dough even thinner to try to fix this cooking problem. I would also make a bigger amount of filling, because I found there wasn’t enough filling on this inside for how big the calzones were. However; since we didn’t use sausage in ours it might have made less filling than the other groups, so they might not have had an issue with this. During the time that it was in the oven, our group cleaned everything up so that we were done cleaning (except for the pan and plates) when the calzones came out of the oven. Despite the added time in the oven, we were still able to finish on time. But, I would still try to be more time efficient if I made the recipe again. Overall, even though the calzones were maybe my least favourite lab this month, it still went pretty well and I still liked trying them.
