Silver Lining!

 

Throughout this quarantine, I have had a lot more time to get sleep and relax. I have also had time to do some things that I did not have the chance to do when I was busy with activities and school. I had the chance to finish the book I was reading in class and I have time to work out, however, one thing I found very pleasing was cooking and baking. Whenever I get the chance I love to bake and cook because I like the idea of the variety and new different foods at home. Back when I was younger when life was a little less time consuming, baking cupcakes was also something I enjoyed doing especially during birthdays. Recently in my food class I found a blueberry lemon muffin recipe that my whole family loved. They were constantly asking me to make more, but I was unable to find the time with all the homework and dancing. Spring break and this quarantine was the perfect time to make the muffins again as well as try new recipes. Aside from the muffins, I also made peanut butter chocolate chip cookies. The best part about the cookies was that they only take about 25 minutes to make, this is excellent because it makes the process more fun and simpler. I have also been cooking with my sister. We both love this excellent salad called the Santa Fe Chicken Salad at Earls and we have always had the urge to make it homemade. We got the recipe from a friend and decided to get right to it. It seemed and was a bit challenging at first since there was so much going on, however, the challenge made it even better. The salad turned out great and we have made it three times already this break! Though these times are stressful and can be extremely boring, it gives everyone an opportunity to do the things they love along with trying new things!
