3 Egg Recipes

Ingredients 

  • 8 large tomatoes
  • 13 cup fresh grated parmesan cheese
  • 8 medium eggs
  • 1 teaspoon herbs, of your choice see note
  • 4 slices cheddar cheese or 4 slices American cheese, sliced into four pieces
  • salt
  • fresh ground pepper

Method

  1. Note the tomatoes should be fresh picked and should be at the point where you can still hollow them out but headed for buttery soft in the next day or so.
  2. Herbs: oregano,chervil, basil, sage, Mrs. Dash.
  3. Preheat oven to 425°F while slicing tomatoes. Remove tops the scoop out seeds and pulp.
  4. Place in a shallow baking dish, sprinkle with a bit of salt or Mrs Dash [I used Italian], fresh ground pepper and put in a pinch of the parmesan cheese.
  5. Crack the egg into the tomato. Sprinkle with pepper, salt or Mrs. Dash, other herbs and a tiny bit of parmesan.
  6. Bake for 20 minutes for soft yolks and 30 to 35 for hard. During the last 4 minutes place two slices of the cheddar cheese in a cross pattern on top. Melt and let brown. When I removed I put a small amount of fresh chives on top of the cheese.
  7. Serves 8.

  1. Cook sausage in large nonstick skillet over medium heat 4-5 minutes or until hot. Stir in potatoes.
  2. Beat eggs, cheese, salt and pepper in large bowl with wire whisk. Pour over sausage mixture.
  3. Cook over medium-high heat 2 minutes, occasionally lifting edge with spatula and tilting skillet to allow uncooked egg to flow underneath. (Do not stir.)
  4. Reduce heat to medium-low; cover. Cook 14-17 minutes or until eggs are set.
  5. Top with tomato and onions. Cut into 8 wedges to serve.

Ingredients

  • 2 eggs
  • 6 halved egg shells of water
  • Salt & Pepper to taste
  • 50ml of dried shrimp
  • 5 dried mushrooms
  • 10ml oil

Method

  1. First I soaked the dried mushrooms in a bowl of boiling water, then I started chopping the dried shrimp till it was really fine.
  2. In a wok I added in 10ml oil and garlic on medium heat. After the garlic browned a little, I added in the dried shrimp and sautéed them until a more golden colour. Next I added in the mushrooms, which I diced, and kept stir frying them until the shrimp was a nice rich golden colour.
  3. I placed the mushroom and shrimp mixture aside and beat the eggs in a bowl. I added a little of pepper and mixed it in. Then I used a half a shell from one of the eggs and filled six of those with water then added them to the eggs. After everything was mixed in nicely, I used a teaspoon and tried to scoop out as much bubbles from the surface as possible.
  4. I used a metal dish to put my dish in. First I laid the shrimp & mushroom mixture evenly on the bottom of the dish, then I poured the eggs over top.
  5. In my steaming pot I placed a metal rack in the center and placed my dish on top. I covered the lid and let it cook for 20 minutes.
  6. It’s supposed to have a smooth exterior surface but when you decide to add your own modifications it’ll change it’s appearance a little. I think I added too much shrimp & mushrooms and or too little water.

On the right —–> is my ingredients; 2 beaten eggs, 6 half shells of water, dried shrimp and mushroom diced.Above is a picture of the shrimp and mushroom already stir-fried and the eggs and water mixed together.                                                                   Above and slightly to the right is the shrimp mixture on the dish and the eggs poured over top.

After being steamed for 20 minutes, the picture on the left is the finished product.                     

 

 

 

When I was younger, my grandmas and my mom would cook this every now and then. It was my one of my favourite things to eat so I decide to try and create it to have a flat surface, however if you opt to add your own ingredients, it does change the outcome.  Overall it was quite easy to make. The only challenge I had was getting the surface flat and smooth and dicing the shrimp and mushroom at a fast pace. It was easier than I predicted it to be. Next time I might add a little bit of herbs or sesame oil for a little more flavor. I would say taste wise, it was really successful 🙂
