3 Recipes (Three Egg Omelet, Muffin Tin Frittatas w/ Salsa, Eggs Benedict)
Three Egg Omelet Recipe : Ingredients – 3 eggs, 3/4 slice cooked ham, 3/4 slice cooked turkey meat, 3/4 green onions, 1/4 tomato, 1/4 sprig fresh parsley, 1/8 medium bell pepper, 1/4 package shredded Cheddar cheese / Directions – 1. Spray or lightly grease a large skillet and heat over medium heat. 2. Crack 3 eggs into a glass measuring cup and beat with a fork or whisk until scrambled. Pour eggs into heated skillet, swirling the pan to coat the bottom. Cover and let cook until eggs are firm, about 2 minutes. 3. Top with 1/4 each of the chopped ham, turkey, green onions, tomato, parsley, green bell pepper, and Cheddar cheese. Fold egg in half over fillings, and serve warm. Muffin Tin Frittatas w/ Salsa Recipe : Ingredients – 8 eggs, 1/2 cup milk, 1/4 tsp salt, 1/4 tsp pepper, 1 cup shredded Monterey Jack cheese, 2 green onions, 1/2 cup / Directions – 1. Preheat oven to 375°F (190°C). Grease 12-cup muffin tin; set aside. Whisk together eggs, milk, salt and pepper. Stir in cheese and green onions; divide evenly among muffin cups. 2. Bake until eggs are set, approximately 12 to 15 minutes. Run thin knife around edge of each cup and remove frittatas. Let cool for 5 minutes or serve at room temperature. Quick Eggs Benedict Recipe :Ingredients – 2 tsp low fat mayonnaise, 1/4 tsp Dijon mustard, 1/8 tsp lemon juice, pinch of salt, 1 egg, 1 whole wheat English muffin half (toasted), 1 slice deli ham / Directions – 1. Stir together mayonnaise, mustard and lemon juice in small bow. Set aside. 2. Sprinkle salt in bottom of microwave egg cooker or microwave-safe bowl or mug. (Salt attracts microwave energy and helps to cook egg withe without cooking yolk completely). Break egg into egg cooker. Pierce yolk and white to bottom of cooker several times with fork. (Piercing is necessary to prevent egg from “exploding” during cooking.) Place lid on cooker base, lining up notches. Twist to secure (or cover with microwave-safe plastic wrap if using a bowl or mug). 3. For a soft-cooked egg, microwave on High (100% power) for 35 seconds or on Medium (50% power) for 1 minute. Egg yolk should still look soft, while egg white should be almost cooked; white will finish cooking as egg stands. If egg is still quite undercooked, turn egg over and microwave for 10 seconds more at same power level. 4. To hard-cook egg, cook for additional increments of 10 seconds until egg yolk and white are nearly fully cooked. 5. Spoon sauce over cooked egg in cooker. The omelet turned out pretty well, and I have made a couple of changes to the recipe to make it so that I would actually enjoy it. I didn’t use any kind of meat or cheese since I like my omelet without them, added onions instead of tomatoes because I don’t eat tomatoes. I also substituted the fresh parsley with dried parsley flakes since that’s the only kind of parsley we had. I have added a tablespoon of milk since it makes the eggs fluffy which it did. In the future, I would probably put less oil in and add more vegetables. I enjoyed making this at home and intend to do it again soon.
