What do I know about infinity?
Infinity goes on forever. There are countable levels of infinity and being infinity there are numbers that will never be even thought of.
What new things have I discovered?
I have discovered that infinity doesn’t always have to go into high numbers but we can find infinity in between numbers like 0 and 1
How can I explain/makes sense of different sizes of infinity?
I can just understand that it goes on forever and that it is impossible to count out all of the numbers or even think of all of them.
What are countable infinities? What are non countable infinities?
Countable infinities are numbers that we have named and counted and we can work with in math.
uncountable infinities are numbers that scale so much and so high with variables and basically really complicated circumstances making them harder to work with.

It’ s pretty clear you learned some interesting things! I didn’t really think about infinity in between number, so it’s great that you pointed it out. I think that it is possible to count infinity, it just makes your head hurt and there isn’t really a point in doing that, since there are countable infinities. To try to answer your question, (or at least make it less confusing), I don’t believe infinity is equal to a number, it’s just easier to imagine as ∞, like a variable, just to make it a little easier to count and imagine it as a number.
