Breakfast/Brunch:

Vegetarian Egg Casserole

Dinner:

Layered Omelette with Parmesan & Herbs

This dish uses simple ingredients that most households already have and makes it into a fancy and appetizing dinner dish. It is also vegetarian. The link to the recipe is here.

Step 3:

I decided to make the lunch dish which was the broccoli, cheddar & spinach frittata. I tried to keep the frittata that I had made as close to the original recipe however, I did have to make some changes. The first change is that I was not able to get broccoli because my family wanted to limit going out as much as possible and the only ingredient that we did not have was broccoli. To make up for this ingredient, I added another cup of spinach which was already in the original recipe so I knew that it would still go well in the frittata. Another alteration was that I only made half of the recipe. I decided that making 8 servings for a household that currently only has 3 people in it was unnecessary and could be wasteful.
