Breakfast Burritos:

Cook 1/2 cup diced chorizo, 1/2 diced onion and 1 tablespoon diced jalapeno in a nonstick skillet over medium heat. Add 4 beaten eggs and 1/2 cup cotija cheese; scramble. Divide among flour tortillas, top with salsa and roll up.

Ingredients

  • 6 Eggs
  • 1/2 cup of Milk
  • 8 oz of Breakfast Sausage without the casing
  • 1 cup of Cooked Black Beans
  • 1/2 Red Bell Pepper, diced
  • 1/2 of a Small Red Onion, diced
  • 1/2 Small Jalapeno, seeded and diced, optional
  • 8-10 inch Large Tortilla, often labeled (burrito size)
  • Cooked Breakfast potatoes, optional
  • 2 Tbsp of Olive Oil
  • Fresh Chopped Cilantro
  • Shredded Cheddar Cheese
  • Salt and Pepper to taste
  • Salsa or Hot Sauce, optional

First i removed jewelry and put on my apron

Then washed my hands

I got all my ingredients and diced my onions, bell peppers and meat.

I cracked my eggs into a bowl and mixed with ½ cup of milk and beat it

I cooked some hash browns to add as a topping afterwards

Then I poured my eggs, onions, bell pepper and milk into a frying pan and fried it.

I grabbed my tortilla wrap and put the fried ingredients together and added my toppings (cheese, cilantro and hash browns)

I proceeded to wrap it.

This process took about 25~ minutes and turned out very well. I am happy with what I have made.
