why it’s not the healthiest : It’s heavily processed and fried and covered in fats.

I like this meal choice because as a highschool student it’s easy and cheap and I can easily afford it.

APPLE CRUMBLE

For crumble
120 ml of flour
120 ml of oats
120 ml of brown sugar
2 ml of baking powder
1 ml of cinnamon
80 ml of butter
3-4 apples

For filling
45 ml of butter
30 ml of flour
15 ml of lemon juice
45 ml of milk
2 ml of vanilla
60 ml of brown sugar
2 ml of cinnamon
Pinch of salt

Recipe
1.Preheat oven to 375 degrees F.
2.In a medium size bowl combine the crumb topping ingredients with a fork or pastry blender until it resembles small crumbs. Refrigerate while you prepare the apple filling.
3.For the Apple Filling: In a small bowl, combine melted butter and flour until well blended. Add lemon juice, milk and vanilla and stir well. Stir in brown sugar, cinnamon, and salt. Pour butter mixture over apples and toss to coat. Pour apple mixture into an 8×8-inch baking dish and spread into an even layer. Sprinkle crumb topping evenly over the apples. Bake for 30-35 minutes or until golden brown and top is set. Remove from oven and allow to cool for at least 10 minutes before serving.

It went very well even though I have never tried apple crumble and we are happy with how the sauce turned out and the final look. What we could improve on is slicing the apples thinner, and layering them nicer. We made decisions on who knows or does things better than others so that in the end everything could turn out perfect.

Breakfast
Potatoes pancakes
Ingredients
• 4 large russet potatoes
• 1 medium onion
• 1 egg
• 1/4 cup flour
• salt, pepper
• vegetable oil for frying
Recipe
1. If using food processor: peel and cube the potatoes and onion. Place the vegetables in food processor and process for about 2 minutes, until potatoes look “grated” and no lumps remain. If using grater: peel the potatoes and onion and grate.
2. Place the potato mixture into a fine strainer or kitchen towel and try to squeeze almost all of the liquid into a mixing bowl.
3. Discard the liquid. You’ll notice white powder on the bottom of the bowl after you pour the liquid out. It is potato starch and it gives texture to the pancakes, so you should keep it.
4. Return the potato mixture into the bowl and add egg, flour, with some salt and pepper.
5. Mix everything well
6. Heat up some vegetable oil in a large, non-stick skillet over medium heat. Add a spoonful of potato mixture, spreading it slightly. Fry for about 2-3 minutes on each side, until the pancakes are crispy and brown.
7. Place the pancakes on a paper towel, to absorb the access oil. Serve with sour cream, fresh salad or Easy Mushroom Sauce. ENJOY!!!
8. Eat with milk and eggs.
I think this recipe would taste very good and delicious because it has a nice browny look and it’s nice and crispy. The spices give the pancakes a nice flavour and this looks very healthy. The sweetness of the pancakes will taste very good with the saltines of the bacon

Potato soup
Ingredients
• 5 slices bacon, diced
• 3 tablespoons bacon grease (reserved) or butter
• 1 cup diced white or yellow onion
• 1/4 cup all-purpose flour
• 2 cups chicken stock
• 2 cups milk, warmed
• 1.5 pounds potatoes, peeled (if desired) and diced (I recommend Yukon gold potatoes)
• 1 cup shredded sharp cheddar cheese
• 1/2 cup plain Greek yogurt or sour cream
• 1 teaspoon Kosher salt, or more to taste
• 1/2 teaspoon freshly-cracked black pepper
• optional toppings: thinly-sliced green onions or chives, extra shredded cheese, extra bacon, sour cream
Recipe
1. Heat a large stockpot over medium-high heat.  Add diced bacon and cook until crispy, stirring occasionally.  Transfer the bacon to a separate plate, using a slotted spoon, reserving about 3 tablespoons of bacon grease in the stockpot.  (Discard any extra grease, or you can substitute butter in place of the 3 tablespoons of bacon grease.  Also, if you are short on time, you can dice the potatoes and onion while the bacon cooks to save time.)
2. Add onion and saute for 5 minutes, stirring occasionally, until soft.  Sprinkle the flour on top of the onion, and stir until combined.  Saute for an additional minute to cook the flour, stirring occasionally.  Then stir in the chicken stock until combined.  Stir in the milk and potatoes until combined.  Continue cooking until the mixture reaches a simmer, but is not boiling.
3. Reduce heat to medium-low, cover, and simmer for about 10-15 minutes or until the potatoes are soft, stirring occasionally every few minutes so that the bottom does not burn.  (The smaller you dice your potatoes, the faster they will cook.)
4. When the potatoes are soft, stir in the cheddar cheese and Greek yogurt (or sour cream), salt, pepper and cooked bacon bits.  Taste and see if it needs more salt or pepper or cheese.
5. Serve warm, garnished with desired toppings.  Or, transfer to a sealed container and refrigerate for up to 3 days.
I think this dish is a very hearty soup that will make you feel warm and cozy inside on a cold gross day. This soup follows a fairly easy recipe with simple ingredients that almost everyone has in their kitchen. The salty bacon will really compliment the starch from the potatoes.

Baked Potatoes
Ingredients – per person
• 1 medium baking potato
• 1 teaspoon olive oil
• 1/2 teaspoon salt
• 2 teaspoons butter
• 1 pinch freshly ground black pepper
• 1/4 cup shredded Cheddar cheese
Recipe
1. Preheat the oven to 300 degrees F (150 degrees C). Scrub the potato, and pierce the skin several times with a knife or fork. Rub the skin with olive oil, then with salt.
2. Place the potato in the preheated oven, and bake for 90 minutes, or until slightly soft and golden brown. Slice the potato down the centre, and serve with butter and black pepper. Sprinkle shredded Cheddar cheese over the top, if desired.
I think the baked potatoes will taste very good for dinner the potato have a nice warm inside and a crispy skin on the outside with the sour cream on top and the green onions it will be very creamy and flavourful

Connections-based Learning Artifacts – Engineering Brightness

Connections Based Learning

In our science 9 class this semester we were able to do many things that we couldn’t do in any other class. Instead of doing things like labs and small tests every week, we were able to help people who don’t have access to the same materials as we do. We were able to make a difference in the world and I think that’s what great about our science class. Here at Riverside, we are incredibly fortunate to collaborate with all these awesome people in the Dominican Republic and Nova Scotia. Our experience was really enjoyable and I really liked working on this life changing project with my friends.

Our group collaborated with another group in the class to create shakable lights using magnets. We decided that our group would work on fundraising money to help pay for the cost of the materials we would need to create the lights that the other group would design and create these lights. For fundraising, we created a Christmas themed photo booth in the library computer lab and it was actually really fun. Ashiana also created a video to be played during RAP to get the word out about the fundraiser. And our final tactic we used to get the word out, was through social media. We created a twitter and instagram page for out engineering brightness groups. We reached out to the riverside @rapidevent page an got them to post about our group to get more followers and to spread the word even further. We actually accomplished a lot and we were able to make a small profit. I personally think we could’ve done better on trying to get the word out and spreading awareness for the cause. Despite these feelings I have, I feel like we accomplished so much in such little time and that makes me really happy.

We did really well on collaborating ideas and working as a team to really achieve out goals. We had group chats on imessage where we were able to communicate with each other easily and quickly. We always had the proper supplies we needed and I honestly think no one has ever failed to bring the proper supplies for whatever project we were doing that day. There are a couple things we can improve on like the fact that we were trying to just do everything at once so I think if we ever do something like this again, we should try and be more time efficient.

Overall, I find the Connections-based Learning experience to be one that everyone should have the joy of participating in. In COL we are not only learning new and important science, we are able to use our knowledge to help those in need and I think that it absolutely amazing. I believe that Mr. Robinson taught it to us so well and the skype chats he was able to arrange for our class was a truly incredible experience.

The skype experience with Eladio and Dennis really opened up my eyes to the issues surrounding light poverty. It was very interesting seeing how different our 2 countries are. The chat was very informative and I actually learned a lot about life in the Dominican.  Our idea is to collaborate with Alhan, Ben Zac and Josh to create shakable lights. We are two teams of four and we would work together to make our hopes and dreams become reality. Ashiana, Marwa, Jayden and I are working on fundraising and raising awareness for this cause. We have connected with Eladio and Dennis to see if they could help us out by creating an informative video that we could show to the students at Riverside Secondary.

Our group has talked to many different people who have helped us to get where we are. Eladio and Dennis have played a huge role in helping us understand what we need to know and guiding us towards greatness. My groups interest was more in fundraising and raising awareness for this project but it works out to our advantage because the group we are collaborating with is all about the building and engineering aspect of it. We have come a long way with our fundraising ideas and how we go about to do these things. We have decided on doing a Christmas themed photo booth where students can come with friends and get their picture taken. The whole process of collaborating with friends and coming up with these ideas that can change our world in such a positive way is truly a great experience

What are your groups plans to help address light poverty in the Dominican Republic?img_2982

In the beginning we had brought up ideas like a car wash or a bake sale but we felt they were too simple and basic. So we decided to step it up and create a Christmas themed photo booth. So far we have made a request for this to be announced over the PA system in the mornings for everybody to hear, talked to school staff members to help with our arrangements and so on. I feel our group works really well together and we haven’t had many issues working on this project. We have had much help from Mr.Robinson and many other influential people.
